It's windy, cold, and downright damp.
And I went home sick with a fever, migraine, and voice scarcely louder than a whisper.
Yep, my supervisors are pissed off at me.
Sorry! At least I made an effort to get to work despite feeling like crapola. And so what if I went over your heads to go home. If it's obvious I shouldn't be at work, then I shouldn't be at work!
Meanwhile, outside of my job, which invariably makes me pissy, I'm going to be making Pomme en Croute for my family.
Here's the recipe.
6 baking apples (Jonathan, Rome Beauty, Golden Delicious, Granny Smith, Cortland, Pippin, Winesap)
Ground mulling spices (enough to sprinkle in each apple)
Fresh grated ginger (enough to give a kick...use at your own discretion!)
Brown sugar
Phyllo dough (if you don't have this, thinly rolled pie crust works well)
Butter (you'll need this for your crust)
Caramel for drizzling on top
Core and peel the apples, (and for heaven's sakes, make sure they're washed!) and set them out. Take your phyllo dough, and put a damp dishcloth over it so that it doesn't dry out. Start with three sheets of dough, lay them out, brush melted butter in between all of them, and place your apple in the middle. Sprinkle the spices, sugar, and ginger inside, wrap up the apple into a little packet (it'll look like a little bag), and trim if necessary. Brush the packets with a little melted butter. Do this with the rest of the apples.
Place into a glass baking dish (that's been sprayed with non-stick coating...your pans will love you) about an inch apart. Bake in a preheated 350 degree oven for 15-20 minutes.
Drizzle the caramel on top, and serve individually...WHILE IT'S HOT!
Yields six servings.
