Since posting yesterday over the success of dinner last night, I've gotten several requests for the receipt of the egg rolls. And since I promised to post it, here it goes.
zephyrofgod's Most Totally Awesome Egg Rolls
1/2 package of large egg roll wraps (found in either produce or in the Asian cuisine aisles)
1 lb. lean ground beef
1 t. salt
1 t. black pepper
1 egg yolk, beaten (I used a whole egg...it's for the egg wash)
1/2 cup white onion, chopped
1/2 cup celery, chopped
1/2 cup carrot, chopped
One clove garlic, minced
Brown the ground beef with salt, pepper, and garlic in skillet. Remove meat, and sauté onion, celery, and carrot in the same skillet with a small amount of Crisco (I didn't, and they ended up a bit on the dry side. Veggie or peanut oil works, too.) Combine meat and vegetables in a bowl. With one egg roll wrap on a cookie sheet, arranged in a diamond shape (trust me, the mess will be far better contained), brush the egg wash on all four sides, and spoon a bit of the meat and vegetable mixture into the center. Fold the bottom corner up, followed by the two sides. Roll up towards the top, and place on a plate to fry. Deep fry in either peanut or vegetable oil until GBD (that's golden brown delicious, for those who don't watch Alton Brown). Drain on paper towels. Estimated yield: 10 (depends on how stuffed you make your egg rolls. I prefer lots of stuffing. You may not.)
